1 pkt complete Oriental salad kit - (10 oz)
2 tbl mayonnaise
1 can tiny cocktail shrimp - (6 oz) drained
8 x egg roll skins
Instructions:
Instructions: Preheat the oven to 450 degrees. Coat a baking sheet with nonstick cooking spray.

In a large bowl, combine the package of Oriental dressing and the mayonnaise until smooth. Chop the mixed greens and vegetables coarsely and add to the bowl. Add the noodles and shrimp; mix well.

Spoon the mixture evenly onto the center of each egg roll skin. Fold one corner of each skin up over the salad mixture then fold over both sides, envelope fashion. Roll each egg roll toward the remaining corner to close and place seam-side down on the baking sheet.

Brush each roll with oil and bake for 12 to 14 minutes, or until golden and crisp. Serve immediately.

This recipe yields 8 servings.

Comments: An Oriental salad kit usually includes mixed greens and vegetables, a package of dressing, and crispy noodles. These can be found next to the bagged salads in the produce department of your supermarket. If you prefer, you can leave out the shrimp or replace it with shredded cooked beef or chicken.
