Instructions: In a sauce pan reduce the orange juice to half. Add garlic. Add a tiny pinch of tarragon. (You can also use frozen orange juice and add half of the recommended water. This way you save time by not having to reduce the juice. I just gently warm and add the spices listed above). Cut up all the vegetables. Parboil the carrots for 5 minutes. Rinse in cold water to prevent overcooking. Place the servings of vegetables and shrimp on the foil. Sprinkle salt, pepper, and tarragon over the vegetables and gently toss. Sprinkle the reduced orange juice and sherry over the food. Roll the edges of the foil to completely seal, being careful not to tear the foil. Gently shake and turn the packet over to cover all the vegetables and meat with the liquids. Bake in a 400 degree oven on a tray for 15 to 18 minutes. Allow each person to open their own packet at the table. I like to serve with white rice.
