DRESSING ----------------
1/4 cup rice vinegar
3 tbl cooking oil
2 tbl honey
1 tbl soy sauce
2 tsp sesame oil
2 tbl finely-grated ginger
1/2 tsp finely-minced garlic
Freshly-ground white pepper to taste
----------------- SALAD ----------------
1 lb raw jumbo shrimp shelled, deveined
1/2 tsp salt
4 cup mixed salad greens or shredded lettuce
1 x red bell pepper cut match-sticks
4 x fresh button or shiitake mushrooms stems discarded,
and thinly sliced
Instructions:
Instructions: Combine dressing ingredients in a small bowl; whisk until blended.

In a bowl, toss shrimp with salt; let stand for 30 minutes.

Place salad greens, bell pepper and mushrooms in a wide, shallow bowl.

Grill or broil shrimp for 2 to 3 minutes or until done. Place cooked shrimp over salad. Add Diamond Sesame Glazed Walnuts. Pour dressing over salad and toss.

This recipe yields 4 to 6 servings
