2 tbl olive oil
2 tbl white wine vinegar or lemon juice
1/4 tsp dried rosemary crushed
1/4 tsp freshly-ground black pepper
3/4 lb tiny cooked shrimp meat
1 med tomato diced
1/2 sm English cucumber diced
1/3 cup Kalamata or other black olives pitted, and
coarsely chopped
1/3 cup diced feta cheese
Instructions:
Instructions: To make the dressing, combine the olive oil, vinegar, rosemary and pepper in a jar with tight-fitting lid. Shake well, taste for seasoning and set aside.

Combine the shrimp, tomato, cucumber, olives and feta in a large bowl. Shake the dressing and pour it over the shrimp mixture; toss to thoroughly coat.

Spoon the shrimp mixture onto the bottom half of the bread loaf and cover with the top half. Slice across into 4 sandwiches and serve.

This recipe yields 4 servings.

Comments: This tasty sandwich is a take-off on the traditional Greek salad. As a variation, you can omit the French bread and serve the shrimp mixture over salad greens for a quick salad.
