1/4 cup water
3/4 lb medium shrimp with shells
1/2 cup grated Parmesan divided
3 oz soft cream cheese
1/4 cup sour cream
1 x green onion minced
1/2 tsp Cajun seasoning
Instructions:
Instructions: Bring water to a boil; add shrimp and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water. Peel, devein and finely chop.

Stir together 1/4 cup Parmesan and next 4 ingredients (through Cajun seasoning); stir in shrimp. Chill 8 hours.

Bake pastry shells according to package directions; cool completely. Store in an airtight container 8 hours, if desired.

Fill baked pastry shells with shrimp mixture. Place on baking sheets and sprinkle evenly with remaining 1/4 cup Parmesan. Bake at 325 degrees for 10 to 15 minutes or until thoroughly heated. Serve immediately.

To serve tartlets chilled, do not bake after filling. Cover and chill 1 hour. Sprinkle with Parmesan before serving.

This recipe yields 2 dozen.
