1/2 dl Vegetable oil
50 gm Butter
1 x Onion, peeled and finely chopped
2 x Cloves garlic, peeled and finely chopped
250 gm Prawns, peeled
250 gm Red snapper, cut into chunks
4 x Plum tomatoes, chopped
2 dl Coconut milk
1 x Bay leaf
2 dl Water or chicken stock
Red peppers
Aubergine
Ochre
1 x 250 gram lon Basmati ground rice
1 pch Saffron
40 gm Flaked almonds, toasted
Spring onions
Instructions:
Instructions: Heat the oil and butter. Add onions and sweat until soft. Add the garlic and sweat for a further minute.

Add the marinated fish and prawns, then the tomato, bay leaf, water, coconut milk, rice and saffron. Simmer and cover with lid on, on the side of the sauce for 20 minutes.

Sprinkle with flaked almonds.
