Instructions: In a large, heavy saucepan, melt butter over medium heat and saute onion and garlic about 3 minutes. Stir in ginger, curry powder, cayenne and 2 teaspoons salt. Stir in coconut milk and water. Bring to a simmer and cook 5 minutes.
Add sweet potato and simmer, uncovered, 15 minutes more. Season shrimp with remaining teaspoon of salt and pepper. Add shrimp and mango to pan, return to a simmer and cook 4-5 minutes, or until shrimp are evenly pink. Garnish with green onion and cilantro. Email this Recipe:
