2 bn fresh asparagus
6 cup water
1/2 lb unpeeled medium fresh shrimp
16 oz orzo cooked
1 can artichoke hearts - (14 oz) drained, halved
1 sm red bell pepper coarsely chopped
1/2 cup shredded fresh basil
2 tbl chopped fresh oregano
Fresh Herb Vinaigrette (see below)
6 cup gourmet salad greens
Shaved Parmesan cheese
----------------- FRESH HERB VINAIGRETTE ----------------
1/2 cup olive oil
1/2 cup white wine vinegar
1/2 cup chopped fresh basil
3 tbl chopped fresh oregano
1/3 cup sliced green onions
2 x garlic cloves minced
1/2 tsp seasoning salt
1/2 tsp dried crushed red pepper
Instructions:
Instructions: Snap off tough ends of asparagus; arrange asparagus in a steamer basket over boiling water. Cover and steam 8 minutes or until crisp-tender. Plunge asparagus into ice water to stop the cooking process; drain and chill.

Bring 6 cups water to a boil in a saucepan; add shrimp, and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water. Peel shrimp; devein, if desired.

Combine shrimp, orzo, artichokes, and next 3 ingredients in a large bowl; add Fresh Herb Vinaigrette, tossing well. Serve over salad greens with asparagus; top with cheese.

For Fresh Herb Vinaigrette: Whisk together all ingredients. (Makes 1 1/3 cups)
