Ingredients:

1/2 cup olive oil
1/4 cup lemon juice or lime juice
2 tbl dry white wine
1/4 tsp dried oregano thyme and garlic
powder
salt and pepper
2 lb scallops drained
Instructions:
Instructions: To make marinade, combine all ingredients, except scallops and shrimp, in a jar and shake well. Marinate seafood at room temperature for 2 to 3 hours. (HONEST thats what it says. However, its scary to me and I put it in the frig.) Alternate shrimp and scallops on skewer. Broil over charcoal or under broiler for 10 minutes, turning once. Delicious served with rice pilau or pasta.

Serves 6 to 8.

Betsys Notes: Made 8/00 - without oil this is 6 WW points. The seafood did not seem to absorb much of the marinade, so I am only guessing another 1 point for the marinade. Very good, but the shrimp seemed to pick up more of the flavor than the scallops. I used lime juice.

Well, back from 2 weeks of vacation on the Maine coast. I tried some new recipes that came out well. Lillian Mount posted this to Eat-L a month or so ago. I was reluctant to try this due to the amount of oil in the marinade, but I figured it was vacation, so what the heck. It actually seemed to absorb little of the marinade, so I am taking a chance and posting this to the lowfat list too. I would have liked a stronger citrus taste and would next time use either more juice, or fresh (I didnt have fresh limes handy), or key lime juice. Very good and very large servings!
