1/2 cup chopped onion
2 tbl olive oil
1 can Italian-style plum tomatoes - (28 oz) drained, cut up
1/3 cup dry white wine
2 tsp dried oregano leaves
3/4 lb medium shrimp cleaned
1 pkt Athenos Traditional Crumbled Feta Cheese (4 oz)
Instructions:
Instructions: Cook and stir onion in oil in large skillet on medium heat 3 minutes. Add tomatoes, wine and oregano. Reduce heat to low; simmer 5 minutes or until thickened.

Add shrimp. Cook 3 minutes, stirring frequently, until shrimp are pink. Sprinkle with feta cheese; simmer 1 minute. Stir in parsley.

Serve with hot cooked rice and garnish with fresh herbs, if desired.

This recipe yields 4 servings.
