Instructions: Youll want to use fresh, not frozen, shrimp for this. Shrimp is very low in fat and, in moderate amounts, is good for a heart-healthy diet. Serving the shrimp and tomatoes over rice helps to keep the amount moderate. While youre at it, why not try brown rice, which has the well-earned reputation of being particularly good for you?
Combine lemon juice, olive oil, and garlic in a small bowl. Toss with shrimp. Cover with plastic wrap. Allow to marinate several hours in the refrigerator. (If you decide late in the day to make this, set bowl on counter for 1/2 hour before cooking.) Remove shrimp from marinade and add liquid to tomatoes. Heat tomato mixture in a medium saucepan. While it is heating, stir-fry shrimp in a well-heated nonstick skillet for about 3 minutes or so. Allow to brown slightly. Add shrimp to tomato mixture and season with pepper. Serve over rice.
