30 oz canned asparagus spears
2 tbl butter, melted
2 tbl flour
1/2 tsp Salt
1/4 tsp white pepper
1/4 tsp sugar
red pepper, to taste
1 cup light cream
1/2 oz canned large shrimp, drain & rinse
1 tsp lemon juice
1 x egg yolk, beaten
2 tbl sherry
3 tbl Swiss cheese, grated
Instructions:
Instructions: Heat asparagus spears in medium saucepan. In separate pan, blend flour, salt, pepper, and sugar. Gradually stir in cream. Cook over medium heat, stirring constantly until thickened and smooth. Reduce heat and add shrimp. Combine remaining ingredients in a bowl. Stir this egg mixture into sauce and heat through. Do not boil.

Arrange drained asparagus in oblong baking dish and cover with sauce.

Heat uncovered at 400 degrees until hot. May be served on toast as main dish.

Serves 8.
