MELT gula Melaka and water over a gentle heat until the sugar dissolves. Remove from the heat and stir in the ingredients for the Thai chilli sauce. Shallow-fry dried prawns until crispy. Combine with onions and set aside. Rub fish lightly with salt. Brush with egg and dip in tapioca flour. Deep-fry fish in hot oil until golden and crispy. Drain fish well, then place on a serving platter. Pour cooked Thai chilli sauce over fish. Sprinkle dried prawns and onions over and serve with garnishing. Email this Recipe:
