800 gm tilapia fish, clean
1 x egg, beat lightly
1/2 cup tapioca flour
Thai Chilli Sauce (combine)
1 clv garlic, slice finely
1 tsp ginger flower (bunga kantan), slice finely
3 tbl Thai sweetened chilli sauce
3 tbl plum sauce
4 x birds eye chilli (cili padi), slice finely
1 tbl gula Melaka
2 tbl water
50 gm dried prawns, chop coarsely
2 tbl oil
100 gm onions, slice
Garnishing

MELT gula Melaka and water over a gentle heat until the sugar dissolves. Remove from the heat and stir in the ingredients for the Thai chilli sauce.

Shallow-fry dried prawns until crispy. Combine with onions and set aside. Rub fish lightly with salt. Brush with egg and dip in tapioca flour. Deep-fry fish in hot oil until golden and crispy. Drain fish well, then place on a serving platter.

Pour cooked Thai chilli sauce over fish. Sprinkle dried prawns and onions over and serve with garnishing.
