850 gm fresh anchovies or sprats
1 x salt pepper dried basil
2 tbl olive oil
1 x onion chopped
1 clv garlic chopped
400 gm canned tomatoes drained
100 gm provolone or other crumbly cheese
1 tbl capers
Instructions:
Instructions: Wash and clean the fresh anchovies or sprats removing heads and tails.

Pat dry.

Season with salt and pepper both inside and out.

To make the tomato sauce heat the oil in a pan fry the onion and garlic until they begin to soften.

Add the tomatoes and cook over a high heat until the sauce is well reduced.

Season with salt and pepper and a pinch of basil.

Grease an ovenproof dish.

Put a layer of fish in the dish.

Cover with half the sauce and scatter with half the cheese.

Add half the capers and all the canned anchovy fillets.

Now add the remaining fish sauce cheese and capers in layers as before.

Bake at 220 degrees C/425 degrees F/gas 7 for 20 minutes.
