Instructions: Heat the oil in a stewpan and add all the vegetables including garlic.
Saute for 5 minutes shaking the pan so that the vegetables do not stick. Season with salt cayenne and paprika. Cover the pan and let the vegetables cook in their own juices for 20 minutes. Add a little water during cooking if necessary. Add the olives and cook for another 10 minutes. Sprinkle parsley over the stew before serving. Email this Recipe:
