Instructions: 1. Preheat oven to 325 degrees. Spray bottom of an 8-inch springform pan or pie pan with nonstick cooking spray. Evenly spread graham cracker crumbs on bottom of pan. Blend egg substitute, tofu, sugar, lemon juice, vanilla extract and ricotta in a blender until smooth.
2. Pour into pan and bake 35 to 40 minutes. Remove from oven and cool 15 minutes at room temperature. Refrigerate for at least one hour. Top with fresh fruit, if using. Makes 8 servings. Email this Recipe:
