Ingredients:

3 tbl Unsalted butter
1 x Onion, finely chopped
1 x Carrot, finely chopped
1 x Potato, cut 1/2" chunks
1 tsp Coarse salt
1/2 tsp Freshly-ground black pepper
1/2 lb Silverbeet, white and green parts, washed, cut strips
Instructions:
Instructions: Heat the butter in a large saucepan over moderate heat. Add the onion, carrot, potato, salt and pepper and saute until the vegetables are tender, 7 to 10 minutes. Add the Silverbeet, stirring to mix well, cover the pan and simmer over low heat until silverbeet is tender, 7 to 10 minutes. Add the vinegar and simmer, uncovered for a few minutes longer. Serve warm. This recipe yields 4 to 6 servings.
