Instructions: Remove scales, and clean fish. Make shallow cuts on both sides so that fish absorbs sauce well.
Put all ingredients for simmering sauce in pan and bring to boil. Arrange fish in pan, place paper drop lid with hole in center directly on ingredients for even seasoning and cover with another tight-fitting lid. Preheat high-speed gas oven to about 450 degrees. Cook in oven about 15 minutes; leave in oven for another 5 minutes. Alternatively, the fish can be simmered slowly over medium heat stove. This recipe yields 4 servings. Email this Recipe:
