Instructions: To make the croutons cut the bread into small cubes of about 10mmand fry them in a little oil until pale gold.
Drain well on kitchen paper and sprinkle with the herbs. Wash and dry the spinach well if you havent bought it ready prepared and tear the leaves into pieces. Dont cut the leaves as theyll go floppy. Season generously with salt and pepper. Gently heat the honey and lemon juice together in a saucepan until the honey melts. Then add the oil stir and when the dressing is hot pour it over the spinach and serve at once with the croutons sprinkled over the top. A salad made of small crisp fresh spinach leaves of a deep rich green is one of my great delights. Buy readyprepared baby spinach leaves if you can get them. You just need to rinse them through before using them. This is the perfect salad for lunch served on its own with just some warm crusty French bread and its also good served after a main course.
