Instructions: Cut 1 large acorn squash crosswise into 1/2" thick rings and remove the seeds. Brush with 1 tsp olive oil and sprinkle with 1 tbl dark brown sugar and salt and pepper to taste. Roast at 450 degrees F for 15 minutes, or until tender.
