12 sausages
Ingredients:

450 gm minced pork
450 gm minced veal
225 gm shredded suet
fresh breadcrumbs
1 tbl chopped fresh herbs or 1 tsp dried mixed herbs
1 x salt and pepper
Instructions:
Instructions: Mix all the ingredients together well; it is often easiest to do this using your hands. Divide the mixture into about 12 and on a floured work top form into sausage shapes.

Stand the rack inside the roasting tin the small one will take about 8 sausages at a time.

Put the sausages on the rack and cook in the roasting oven on the second set of runners from the top.

After 20 minutes turn the sausages and brush them with a little of the fat in the roasting pan.

Return to the oven for a further 20 minutes.

Homemade sausages are easy to make. Add some sauteed onions or leeks for a change or serve with roast onions and baked potatoes.

Makes 12 sausages
