Instructions: Finely grate the lemon squeeze and reserve the juice.
Deseed and roughly chop the tomatoes. Halve the olives and finely slice the baby courgettes. lightly coat the skate with seasoned flour. Heat 2 tbsp oil in a large frying pan and cook the fish on the boiling plate for I2 minutes on each side or until golden brown. Remove from the heat and place in the simmering oven. Place the remaining oil in a frying pan add the crushed garlic chopped tomato courgettes and the lemon rind. Stir for 2 to 3 minutes on the boiling plate. Add the lemon juice capers thyme and black olives. Season. Spoon the courgette mixture over the fish and return to the simmering ovenfor 4 to 5 minutes or until just tender. Lemon capers olives and thyme combine wonderfully with fish. This dish is also excellent made with salmon instead of skate. Serves 4 Email this Recipe:
