For the marinade
6 tbl Soy Sauce
6 tbl Pineapple Juice
2 tsp Grated Root Ginger
1 x Garlic Clove, crushed
1 tsp Mustard
4 tbl Dry Sherry
1 tbl Peanut Oil
1 kg /2lb Pork Loin
Instructions:
Instructions: 1. Combine all the marinade ingredients together in a bowl. Mix well.

2. Cut the pork into 25mm/ 1 inch cubes and place in the bowl. Pour the ginger-pineapple marinade over the meat. Mix well and let the meat marinate in the fridge for at least 4 hours, preferably overnight.

3. When ready to cook, preheat the grill to medium. Cut the stem ginger into thin slices. Thread the meat on to 4 skewers, alternating with the ginger slices. Brush the meat and ginger with the marinade.

4. Cook under the grill for 10-15 minutes, until the meat is cooked through , turning the skewers and basting frequently with the marinade. Serve immediately.
