1/2 cup Red, yellow, green bell peppers
1 x Onion
2 x Bacon slices
3 tbl White vinegar
1 tbl Vegetable oil
1 tbl Water
1 tbl Brown sugar
1 tsp Dijon mustard
Instructions:
Instructions: Cut peppers into strips, chop onion and cut bacon into pieces. Cook bacon in large skillet until crisp. Add peppers, onion and cabbage and toss gently. Combine vinegar and next 6 ingredients. Mix well and add to vegetable mixture. Bring to a boil, cover, reduce heat and simmer 8 minutes or until cabbage is tender, stirring occasionally.

Yield: 4 servings.
