Instructions: Fill a medium saucepan three-quarters full with water and bring to a boil over high heat. Add the potatoes and cook for 10 to 12 minutes, or until fork-tender; drain and set aside.
In a large skillet, heat the oil over medium-high heat. Add the onions and saute for 5 to 6 minutes, or until they start to brown. Add the potatoes, salt, and pepper to the skillet; mix well and cook for 15 to 17 minutes, or until brown, turning occasionally. This recipe yields 4 to 6 servings.
