Place 4 of the slices peaches in a bowl, sprinkle with sugar and lemon juice, then arrange slices decoratively on 4 serving plates. Make "bellinis" by pureeing the remaining peach in a food processor or blender and placing an equal amount of the puree in each of 4 Champagne flutes or tall wine glasses.
