Instructions: In blender container, combine plain gelatin and lime juice. Wait 1 minute, until softened, then add boiling water. Cover and blend on high speed until all granules are dissolved. Add sugar substitute, evaporated skim milk, cold water, pudding mix, and lime rind, if desired. Cover and blend smooth.
Chill in the refrigerator about 20 minutes, until mixture is partially set. Spoon into prepared pie shell and chill several hours, until firm. Pie may be garnished with lime slices, and prepared low-calorie whipped topping, if desired. KEY LIME PARFAITS: Omit pie shell from preceding recipe. Prepare filling according to directions. Then, whip 3 egg whites and a pinch of salt until stiff and fold into prepared filling when partially set. Spoon mixture into parfait glasses and garnish with lime slices.
