3 lb sweet potatoes
1 tbl butter softened
1/2 tsp ground cardamom
Kosher salt to taste
freshly ground black pepper to taste
Instructions:
Instructions: Put the potatoes on a baking sheet and roast them at 300 degrees for 2 hours. Remove from oven, peel off skins, and mash or puree the flesh (dont use a food processor).

Add butter, cardamom, salt, pepper and 1 tablespoon of the brown sugar. Mix well and taste. Add remaining sugar if desired. (Can be made ahead and reheated in a double boiler or microwave oven.)

Cooking tip: If you use a food mill, you dont have to peel the cooked sweet potatoes. Just cut them in chunks and put them through the mill. The skins will stay behind.
