Instructions: Method
1 Place margarine and sugar in a basin and cream together until light and fluffy 2 Add eggs one at a time and beat well into the mixture 3 Fold in the sifted flour until thoroughly incorporated 4 Place a teaspoon of the mixture into greaseproof cake cases 5 Bake until golden brown and springy to touch

Chocolate approx substitute loz (28g) self raising flour with loz (28g) cocoa Orange/Lemon approx grated rind of 1 orange or lemon and 2tbsp juice Cherry approx add loz (28g) glace cherries chopped Fruit approx add loz (28g) mixed dried fruit Add to the mixture after the addition of eggs

small oven: 190 degrees C approx 15-20 minutes PREHEATED bottom shelf
fan oven: 170 degrees C approx 15-20 minutes PREHEATED
