1 cup sugar
2 env unflavored gelatin
1/4 tsp salt
1 can evaporated milk, (6 oz.)
2 x egg yolks, beaten
1 tsp lemon peel, grated
2 ct cream-style cottage cheese, (12 oz. carton)
2 tbl lemon juice
1 tsp vanilla
2 x egg whites
1 cup whipping cream, whipped
----------------- CRUMB CRUST ----------------
1 cup graham cracker crumbs
1/4 cup sugar
3/4 tsp cinnamon
1/4 tsp nutmeg
Instructions:
Instructions: Crust:
Melt butter: mix with crushed crumbs and other ingredients. Reserve 1/4 cup for garnish. Put remainder on bottom and sides of a 9-inch spring-form pan. Chill.

Filling:
In a saucepan, combine 3/4 cup sugar, gelatin and salt. Stir in cottage cheese, lemon juice, and vanilla: chill. Stir occasionally until mixture mounds. Beat egg whites to soft peaks. Gradually add 1/4 cup sugar; beat to a stiff peak. Fold into gelatin mixture. Fold in whipped cream. Pour into chilled crust. Sprinkle with remaining crumbs. Chill overnight.

Serves 8 people.
