Instructions: This process does not cook the meat or vegetables-it flavors them. A small Weber Kettle Grill can be used for this. These small dome-covered cookers are designed primarily for grilling steaks on a small patio, but their convenient, size and design makes them ideal for smoking in small quantities.

Light 4 to 5 pieces of wood charcoal. Mound the hot coals in the bottom of the cooker and let them burn down to a gray ash. Spread out in a single layer and place soaked or green wood pieces over the ashes.

This process lowers the heat of the coals to "cold smoke." Do not place the meat or vegetables directly over the coals. Instead, place them around the outer edges or on a piece of foil. Allow approximately 20 minutes to cold smoke.

Gas grills can also be used by setting the temperature on low, and then turning off the heat. Place smoked wood on the preheated grill rocks.

Place your meat or vegetables on the cool side of the grill or on the top upper rack. Close the lid and smoke about 20 minutes.
