Instructions: Order of preparation:
1. Prepare Sauce 2. Start Fire 3. Prepare and pre-back ribs 4. Add boiling water to smoker 5. Put ribs in smoker and add soaked wood chunks 6. Put on sauce and bake if desired Sauce: Combine all ingredients except ribs and wood chunks in a saucepan, stirring to blend well. Simmer for about 3 to 4 hours, stirring often and adding a little water if needed. Rib Preparation: Trim off as much excess fat as possible. Cut racks in half or thirds, depending on the appetites of your family or guests. Preheat oven to 350. Put ribs on pans in a single layer and bake for 50 -60 minutes Rotate pans if using two after 25 minutes. I bake the ribs while the fire gets ready. Put ribs in an upright position on rib racks in smoker. Add 3 soaked wood chunks to fire. I use apple wood chunks because they create more smoke for a longer time than chips. Smoke ribs for 3 - 3 1/2 hours. Add 3 more soaked wood chunks midway through the smoking. When the ribs are done coat them with sauce and serve immediately or if you need to hold them you can put the sauce on bake at 250 until ready to serve. Serve extra sauce at the table.
