1 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
1 tbl baking powder
1/4 tsp salt
1/4 tsp ground red pepper (1/4 to 1/2)
2 x eggs
1 cup milk
1/4 cup margarine or butter melted
Instructions:
Instructions: Desired toppings, such as sunflower seed, poppy seed, sesame seed, pine nuts, thin strips of roasted sweet peppers, or additional shredded smoked cheddar cheese

In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, salt, and red pepper. In another bowl beat together eggs, milk, and melted margarine or butter. Add to flour mixture. Add the 1 cup shredded cheese and stir just till batter is smooth (do not overbeat). Spoon batter into greased muffin cups, filling cups almost full. Top with desired toppings. Bake in a 425 oven for 12 to 15 minutes or till golden brown. Let cool in pan for 5 minutes. Remove from muffIn cups and serve warm.

Makes 12 muffIns.
