Salad ----------------
1 lb smoked chicken meat in 1" pieces
8 cup mixed baby greens refreshed
3 oz soft goat cheese crumbled
----------------- Candied Nuts ----------------
1/4 cup honey
1/4 tsp crushed red pepper flakes
1/4 tsp salt
3 tbl water
1/3 cup raw whole blanched almonds
1/3 cup raw whole cashews
1/3 cup raw pecan halves
----------------- Salad Dressing ----------------
1/3 cup extra-virgin olive oil
1/4 cup white wine vinegar
1 tbl fresh ginger minced
2 tbl basil leaves finely chopped
2 tbl mint leaves finely chopped
Instructions:
Instructions: Preheat oven to 350F. In a small saucepan add honey, red pepper, salt and water. Bring to a low boil. Add nuts and stir slowly and continuously until all moisture disappears. Line baking sheet with aluminum foil and spread nut on it. Bake until nuts turn a Mahogany color, 12-15 minutes. Remove and cool. Break apart if necessary. Mix salad dressing ingredients in a jar. In a large bowl combine all ingredients and toss with dressing.
