Instructions: Preheat the oven to 160 C, 325 F, Gas Mark 3.
Place the onions on a baking tray, drizzle over the oil and cover with foil. Slow roast for 1 1/2-2 hours. Place the spinach in a saucepan with the butter and seasonings and cook for 3-5 minutes. Caramelise the balsamic vinegar by heating it over a low heat until it reduces by half. To assemble, place the spinach on a serving place, put the smoked ham on top, then the roasted onions and top with the grated cheese. Drizzle the balsamic vinegar around the plate.
