Recipe for Smoked Salmon Mousse on Cucumbers

Amount	Ingredient
8 oz	nonfat cream cheese
3 oz	smoked salmon
2 tbl	red onion coarsely chopped
1 tsp	grated lemon peel
2 x	English cucumbers sliced into 1/4"

Instructions:

Instructions: Mix all ingredients except the cucumber in a food processor until smooth.

Put mixture in a pastry bag fitted with a star tip and pipe onto cucumber rounds.

This mousse can also be used as a spread for French bread.

I think Id omit the oil on this next one. Maybe spray the bread with Pam if need be, and use just a tad of nonfat broth to bind the ingredients?
