1/2 cup cream cheese (regular or light) room temperature
2 x baguettes - (6" to 8" long) split lengthwise
4 tsp small capers drained
4 slc red onion - (paper-thin) halved if large
4 slc large tomato thin slices
8 slc peeled English cucumber thin slices
4 slc smoked salmon - (abt 4 oz total) thin slices
Instructions:
Instructions: Spread cream cheese on cut sides of baguettes, dividing evenly. Sprinkle capers evenly over cheese. Use back of spoon to lightly press in place.

Over 1 side of each, arrange onion, tomato, cucumber and salmon, again dividing evenly. Sprinkle with pepper.

Close sandwiches. Lightly press together. Cut in half (secure with toothpicks, if needed). Serve within 1/2 hour.

This recipe yields 2 servings.
