smoked salmon tartare:
8 oz smoked salmon
1 sm red onion
2 tbl fresh lemon juice
2 tbl extrarirgin olive oil
1 x salt and freshly ground pepper to taste 2 tbspns capers drained and rinsed
1 tbl snipped fresh dill
1 x english (hothouse) cucumber sliced
1/4 x inch thick
2 tbl dijon mustard
Instructions:
Instructions: To make tartare:
In a blender or food processor process smoked salmon onion lemon juice and olive oil to a rough paste.

Add salt and pepper and stir in capers and dill.

Spread cucumber slices with a film of mustard.

Top each with about 1 teaspoon salmon tartare.

Garnish each slice with a sprig of dill.

Never hurry a cucumber. Give it a chance. Slice into it as you would a melon.
