Ingredients:
Amount Ingredient
1 x 227 gram pac Scotch smoked salmon trout, (8oz)
1 x Red eating apple, cored and chopped
3 tbl Soured cream
3 x Kiwi fruit, peeled and sliced
50 gm Toasted flaked almonds, (2oz)
3 tbl Freshly chopped mint
Salt and freshly ground black pepper
Instructions:
Instructions: 1. Cut the trout into bite sized pieces and place in a bowl with the apple, kiwifruit, almonds, soured cream, mint, and seasoning to taste.

2. Mix well and serve immediately on a bed of watercress.

NOTES : A delicious light first course. Can be served with warm crusty bread. Ideal for picnics.
