2 lrg egg yolks
1 lrg egg
1/2 tbl Dijon mustard
1/2 tbl capers packed in brine, drained
1/2 tbl chopped fresh tarragon
3 tbl fresh lemon juice
1/4 cup olive oil
1/2 cup vegetable oil
Salt, to taste
----------------- FOR THE SALAD ----------------
3 lb smoked turkey, cubed
1 lrg red onion, chopped
2 can artichoke hearts (16-ounce ea.), drained
4 x ribs celery, chopped

For The Mayonnaise:
Process the egg yolks, egg, mustard, capers, tarragon and lemon juice in a blender until smooth.

Add the oils in a fine stream, processing constantly until the mayonnaise is of the desired consistency. Season with salt.

To avoid raw eggs that may carry salmonella, use an equivalent amount of commercial egg substitute.

For The Salad:
Combine the turkey, onion, artichokes and celery in a medium bowl; mix well. Season with pepper.

Add the prepared mayonnaise. Toss gently to coat.

Spoon into a salad bowl.
