1 cup diced fresh pineapple
1 x firm ripe mango peeled, diced
1 lrg plum tomato seeded, diced
3 tbl minced onion
1/2 x canned chipotle in adobo sauce pureed
2 tbl lime juice
1 tsp honey
1 tsp white wine vinegar
2 tbl minced cilantro
Instructions:
Instructions: Place the pineapple, mango, tomato, onion, chipotle, lime juice, honey, vinegar, cilantro and salt in a bowl. Toss well to mix. Taste; adjust the seasoning, if necessary.

Serve immediately, or cover and refrigerate a few hours or overnight. Stir well before serving.

This recipe yields 8 to 10 servings.

Comments: The chipotle chile adds the smoky edge. If you prefer just "straight" heat, use chopped jalapeno instead. This tastes best if refrigerated a few hours or overnight.
