Ingredients:

1 lb Beef liver, sliced
1/4 cup Flour
1/4 cup Shortening
3 med Onions, chopped
1/4 cup Chopped celery
1 cup Canned tomatoes
1 tsp Salt
Instructions:
Instructions: Roll each piece of liver in flour; brown lightly on both sides in hot shortening in skillet. Place liver in casserole.

Brown onions lightly; add celery and tomatoes. Simmer until heated through well. Spoon vegetables over liver; season with salt and pepper.

Cover. Baker at 350-degrees F. for 45 minutes.

Yield: 6 servings
