Instructions: Brown quail in heavy skillet in melted butter. Remove to baking dish. Add flour to skillet and stir well. Slowly add broth, sherry, salt and pepper. Blend and pour over quail. Cover baking dish and bake at 325 degrees for 1 hour and 15 minutes. Serve with rice.
