Ingredients:

Cilantro sauce
3 cup Loosely packed fresh cilantro leaves
1/3 cup Water
4 tsp Fresh lime juice
4 x Fresh thai red or green chiles, seeded and chopped*
1/4 tsp Salt
1 pch Sugar

4 x Red snapper, flounder, sole or orange roughy fillets
Instructions:
Instructions: 1. Make Cilantro Sauce: Combine ingredients in blender; puree until smooth.

Makes 3/4 cup.

2. Heat oven to 400 F. Lightly oil 4 squares of foil or parchment paper.

Place fish on foil. Sprinkle lightly with salt; spread 2 teaspoons Cilantro Sauce on each fillet. Fold up around fish and crimp edges to seal; place on cookie sheet and bake 10 minutes. Serve fish with remaining sauce.

*Thai chiles are available in Asian markets.
