Instructions: Preheat the oven to 375. Place the chicken in a pan just large enough to hold them in a single layer. Combine the antipasto, wine or juice and the jalapeno. Pour over the chicken and turn them to coat them well, leaving them skin down in the pan. Cover the pan loosely with foil and do not seal it down. Bake for 30 minutes, remove the foil and turn the chicken skin side up. Baste the chicken with the pan juices. Return the chicken to the oven and bake for 30 minutes longer, basting every 15 minutes. Sprinkle with the parmesan cheese and return to oven for 10 minutes or until the chicken is cooked through.
*Note- you may use boneless skinless breast in this recipe, just bake them uncovered for a total time of 30 minutes. Email this Recipe:
