3 lb Snowshoe hare meat diced
Salt to taste
Coarsely-ground black pepper to taste
4 tbl Butter
1 pkt Taco seasoning mix
1/2 cup Water
1 can Diced tomatoes - (16 oz)
1 can Green chilies - (4 oz) diced
Instructions:
Instructions: Sprinkle the meat with salt and pepper. Melt the butter in a large, nonstick skillet and brown the meat in it. Combine the taco seasoning mix and the remaining ingredients, then pour it over the meat in the skillet. Simmer the mixture over low heat for approximately one hour, stirring from time to time. Serve over hot rice.

Comments: Not only is the snowshoe hare fun to hunt and a unique trophy, it can also be good eating. Snowshoe hare meat has a tendency to be tough, but you can tenderize it by marinating it overnight, boiling it or using a commercial meat tenderizer. Try this recipe for good hare eating.
