Instructions: Put the flours bicarbonate of soda and salt in a mixing bowl.
Add enough buttermilk or yoghurt to make a soft dough. Knead lightly on a floured work top. Shape into a large round about the thickness of your hand and place on a greased baking sheet. Cut a deep cross in the top. Bake on the second set of runners down from the top of the roasting oven for 10 minutes then move the shelf to the bottom set of runners for the next 30 minutes until the loaf sounds hollow when tapped on the bottom. Serve warm. Soda Bread comes from Ireland and is a quick bread to make for breakfast or at the last minute when unexpected guests arrive. It is also good served with cheese for lunch.
