Instructions: Sift together the flours salt baking powder and soda and tip in the bran remaining in the sieve. Stir in the butter or margarine the herbs and cheese.
Mix together the milk and lemon juice and pour on enough to mix to a soft dough.
Knead lightly in the bowl.
Divide the dough into 4 equal pieces and shape each one into a round ball shape.
Place them on a greased and floured baking sheet slightly flatten the tops and cut 2 parallel slashes in the top of each.
Bake in a preheated oven (220c/425f/gas7) for about 20 minutes or until the loaves sound hollow when tapped underneath.
Meanwhile whisk together the ingredients for the French dressing or put them into a lidded jar and shake them vigorously.
Mix together the lettuce watercress sprigs and chicory.
Just before serving toss them with the French dressing.
Arrange the salad on a plate with the cottage cheese in the centre.
Serve with the warm soda bread and butter.
