Instructions: 1. Melt butter in a large saucepan over medium heat. Add the onion, and cook until translucent, about 5 minutes. Stir in 4 cups water and bring to a boil.
2. Gradually stir in the polenta, reduce the heat to low, and cook, stirring often with a wooden spoon, until the polenta is very thick and leaves the side of the pan as it is stirred, about 25 minutes.
