Ingredients:
Amount Ingredient
1 pkt dried somen noodles, buckwheat or plain
1 x green onion, chopped
1 med carrot, julienned
1 x celery stalk, julienned
1 cup sweet corn kernels
1 can Spam, fried and julienned
Sliced kamaboko (fish cake), about 1/4 cup, or shredded crabmeat
2 x eggs, fried omelet-style and sliced
2 cup red leaf lettuce, shredded
2 cup romaine lettuce, shredded
Dressing
2 tbl toasted sesame seeds
2 tbl sugar
1 tsp salt
1/8 cup sesame oil
1/8 cup salad oil
3 tbl rice vinegar
Instructions:
Instructions: To make dressing: Whisk all ingredients and store in a container with a tight lid. Mix well before serving. Store in refrigerator.

To make salad: Cook somen noodles, rinse in cold water and drain. Do not overcook. Add some dressing to noodles to keep from sticking together. Layer ingredients in a 9 inch by 12 inch casserole dish or in individual dishes: noodles, vegetables, meats, egg, finishing with lettuce. Serve cold, drizzling dressing over individual servings.
